Pork and Noodle San Choy Bow
Method
- Heat oil in a large, deep frying pan over medium-high heat. Add pork mince and cook for 5 minutes, breaking up any lumps with a wooden spoon as it cooks. Peel and finely grate ginger, and crush garlic. Finely slice spring onions, keeping white and pale green parts separate from darker green parts.
- Add white spring onions, ginger and garlic to pork and stir fry for 1 minute. Stir in soy sauce and brown sugar. Remove from heat.
- Place noodles into a large, heatproof bowl and cover with boiling water. Stand for 1 minute, then drain. Grate carrot and cut lime into wedges.
- Add noodles to pan over medium heat and toss to combine with pork. Taste and add a little more soy sauce if required.
- Serve pork mixture in lettuce leaves, topped with carrot and green spring onions. Garnish with fresh coriander leaves and serve with lime wedges.
