How to make Chickpea Wrap
Method
- Place the ingredients into a small blender with 1¼ cups water and blitz into a smooth batter.
- Set a non-stick frying pan over a medium-high heat and spray or brush with olive oil.
- Pour in ¼ cup batter to create a 14cm round wrap. Cook for 2-3 minutes on each side or until cooked through and golden brown. Remove from pan and place on paper towel.
- Repeat with the remaining mixture.
- Allow wraps to cool in a single layer and use them in place of bread slices to make a sandwich.
Tip: Filling options are endless. Try smoked salmon and cream cheese with rocket and fresh or pickled red onion slices, served with a wedge of lemon.
Optional: Paprika or cumin would both be good batter additions to replace garlic.
