How to make Salmon Cakes

Ingredients

  • 1 x 415g can Ocean Rise premium red salmon, drained and flaked
  • 1 small brown onion, grated
  • 1 garlic clove, crushed
  • 2 spring onions, finely sliced
  • 2 eggs, lightly beaten
  • ½ cup Emporium grated grana Padano cheese
  • 1 lemon, zested and cut into wedges
  • 1 cup Kook-A-Krum panko breadcrumbs
  • Olive oil spray
  • Colway tartare sauce, to serve

Method

  1. Preheat oven to 220°C (200°C fan-forced). Line a baking tray with baking paper and place in oven to heat.
  2. Combine onion, garlic, lemon zest and breadcrumbs in a bowl. Add the sliced spring onion, eggs, cheese and flaked salmon and gently combine.
  3. Form the salmon mixture into ¼-cup round patties and place on a prepared, hot, baking tray.
  4. Spray with oil. Bake for 15 minutes. Flip over and spray again with oil.
  5. Bake for another 5-10 minutes or until golden and cooked.
  6. Serve with tartare sauce and lemon wedges.
