Ingredients
- 1 x 415g can Ocean Rise premium red salmon, drained and flaked
- 1 small brown onion, grated
- 1 garlic clove, crushed
- 2 spring onions, finely sliced
- 2 eggs, lightly beaten
- ½ cup Emporium grated grana Padano cheese
- 1 lemon, zested and cut into wedges
- 1 cup Kook-A-Krum panko breadcrumbs
- Olive oil spray
- Colway tartare sauce, to serve
Method
- Preheat oven to 220°C (200°C fan-forced). Line a baking tray with baking paper and place in oven to heat.
- Combine onion, garlic, lemon zest and breadcrumbs in a bowl. Add the sliced spring onion, eggs, cheese and flaked salmon and gently combine.
- Form the salmon mixture into ¼-cup round patties and place on a prepared, hot, baking tray.
- Spray with oil. Bake for 15 minutes. Flip over and spray again with oil.
- Bake for another 5-10 minutes or until golden and cooked.
- Serve with tartare sauce and lemon wedges.
