How to Make BBQ Corn with Lime and Chilli Butter
Method
- Heat BBQ or griddle pan.
- Meanwhile, make the lime and chilli butter: Finely chop the chilli (keeping the seeds aside for a hotter butter, if desired). Mix the chilli, coriander, lime zest and juice together with the butter. Mix well until combined.
- Divide into 4 portions. Make them into rounds and store in the fridge until the corn is cooked.
- Barbecue or grill the sweet corn for approximately 15-20 minutes, turning frequently, until cooked and slightly blackened. Season with salt while cooking if preferred.
- Once corn is cooked, serve with each corn cob with a pat of lime and chilli butter along with chopped coriander and lime wedges.
OPTION: If wanting a hotter butter, add a few of the chilli seeds into your mix before you refrigerate.
