How to Make Bombay Potatoes
Method
- Preheat oven to 200ºC (180ºC fan forced). Place potatoes into a large saucepan and cover with water.
- Add half a teaspoon turmeric and pinch of salt and bring to boil for 5 minutes. Drain and place in a large bowl.
- Add remaining spices and a quarter teaspoon turmeric. Toss through the potato. Turn out into a lined roasting pan and bake for 30 to 40 minutes, or until crispy.
- Dice your brown onion and gently fry it with oil, a quarter teaspoon turmeric, salt and pepper. When your potatoes are ready, mix in the cooked onion. Season and garnish with fresh coriander and sliced red chilli. Serve immediately.
