How to Make Brie & Cranberry Pull Apart Soda Bread

Method

  1. For soda bread, preheat oven 210°C (or 190°C fan-forced).
  2. Lightly grease a large baking sheet.
  3. In a large bowl, mix flour, sugar, bicarb soda, baking powder, salt and ½ cup of softened butter.
  4. Stir in 1 cup of buttermilk and egg. Mix together until dough starts to form.
  5. Turn out dough on lightly floured surface and knead slightly. Form dough into a round and place on a lightly floured baking sheet.
  6. In a small bowl, combine melted butter with ¼ cup buttermilk – brush loaf with this mixture. Use a sharp knife to cut an “X” into the top of the loaf.
  7. Bake in oven 45-50 minutes. Check 30 minutes in, brush with butter mix.
  8. Once soda bread is cooked, carefully cut across the bread in rows, in a cross-hatch pattern, a ⅓ of the depth from top.This is to stuff with filling.
  9. Preheat oven to 195°C (or 175°C fan-forced).
  10. In a bowl, whisk together melted butter, rosemary, salt and pepper. Brush mix inside cross-hatches.
  11. Stuff each cross-hatch with brie and cranberries and wrap bread completely in foil.
  12. Bake for approximately 20 minutes, or until cheese is gooey and bread is warm and toasty.
  13. Let cool 5 minutes, then serve.

*Optional: You can also add chopped walnuts in with the brie and cranberries.
