How to Make Brie & Cranberry Pull Apart Soda Bread
Method
- For soda bread, preheat oven 210°C (or 190°C fan-forced).
- Lightly grease a large baking sheet.
- In a large bowl, mix flour, sugar, bicarb soda, baking powder, salt and ½ cup of softened butter.
- Stir in 1 cup of buttermilk and egg. Mix together until dough starts to form.
- Turn out dough on lightly floured surface and knead slightly. Form dough into a round and place on a lightly floured baking sheet.
- In a small bowl, combine melted butter with ¼ cup buttermilk – brush loaf with this mixture. Use a sharp knife to cut an “X” into the top of the loaf.
- Bake in oven 45-50 minutes. Check 30 minutes in, brush with butter mix.
- Once soda bread is cooked, carefully cut across the bread in rows, in a cross-hatch pattern, a ⅓ of the depth from top.This is to stuff with filling.
- Preheat oven to 195°C (or 175°C fan-forced).
- In a bowl, whisk together melted butter, rosemary, salt and pepper. Brush mix inside cross-hatches.
- Stuff each cross-hatch with brie and cranberries and wrap bread completely in foil.
- Bake for approximately 20 minutes, or until cheese is gooey and bread is warm and toasty.
- Let cool 5 minutes, then serve.
*Optional: You can also add chopped walnuts in with the brie and cranberries.
