How to make Broccoli Pasta

Method

  1. Wash and trim brocolli florets and stems into small pieces. Add to a saucepan of lightly salted, boiling water.
  2. Blanch broccoli for 3 minutes and then add the rocket leaves. Take broccoli and rocket out of the hot water and set hot water aside. Plunge greens into a bowl of iced water.
  3. Into the reseved hot water, add the nuts or seeds you are using and soak for 10 minutes. Remove and set aside.
  4. Into a blender add the broccoli, rocket and add the nuts or seeds, along with the parmesan cheese. Add olive oil, garlic, then salt and pepper to taste. Blitz in a couple of bursts to blend pesto.
  5. Meanwhile, cook the pasta according to packet instructions. Once cooked, drain and reserve pasta liquid.
  6. Add pasta back into the saucepan. Add pesto and a ladle full of the pasta water and gently stir through. Add more pasta water, as desired, to make more of the sauce.
  7. To serve, add pasta to each bowl. Top with more grated cheese and cracked black pepper and serve.

Tip: Don’t overcook the broccoli and rocket, as you want to maintain their green vibrancy.

Optional: *You can substitute cashews for pepitas or even hazelnuts.
**To make this dish suitable for vegans, replace ¼ cup of parmesan with 1 tablespoon of nutritional yeast.
