How to make Broccoli Pasta
Method
- Wash and trim brocolli florets and stems into small pieces. Add to a saucepan of lightly salted, boiling water.
- Blanch broccoli for 3 minutes and then add the rocket leaves. Take broccoli and rocket out of the hot water and set hot water aside. Plunge greens into a bowl of iced water.
- Into the reseved hot water, add the nuts or seeds you are using and soak for 10 minutes. Remove and set aside.
- Into a blender add the broccoli, rocket and add the nuts or seeds, along with the parmesan cheese. Add olive oil, garlic, then salt and pepper to taste. Blitz in a couple of bursts to blend pesto.
- Meanwhile, cook the pasta according to packet instructions. Once cooked, drain and reserve pasta liquid.
- Add pasta back into the saucepan. Add pesto and a ladle full of the pasta water and gently stir through. Add more pasta water, as desired, to make more of the sauce.
- To serve, add pasta to each bowl. Top with more grated cheese and cracked black pepper and serve.
Tip: Don’t overcook the broccoli and rocket, as you want to maintain their green vibrancy.
Optional: *You can substitute cashews for pepitas or even hazelnuts.
**To make this dish suitable for vegans, replace ¼ cup of parmesan with 1 tablespoon of nutritional yeast.
