Cauliflower Tacos Recipe
How to Make Cauliflower Tacos
Method:
- Preheat oven to 180°C (160°C fan-forced). Line baking dish with baking paper.
- Chop cauliflower into bite-sized florets (no stalks*). Thinly slice red cabbage and chillis and set aside. Drain corn kernels.
- In a bowl combine, LSA with water, then add all the dry spices and combine together. Place the cauliflower florets into the mix and stir through to coat well.
- Place the cauliflower in an oven dish, spray with oil and bake for 40-45 minutes, or until just soft.
- Let cauliflower cool slightly. Prepare soft tacos according to pack instructions.
- Assemble the cauliflower tacos: first, fill with the shredded red cabbage and corn, then add the seasoned, roasted caulflower. Sprinkle with the sliced chillis and coriander.
- Serve with lime wedges.
- Salsa can be used also to drizzle over the tacos.
*Note: Reserve the cauliflower stalks for your next soup or vegetable stock, or for the next time you’re making cauliflower rice.
