How to Make a DIY Salmon Tostada Board
Method
- For the tostadas, use a 10cm round cutter to create 4 rounds per wrap, making 16 in total.
- Place 1cm oil into a frying pan over a medium-high heat and fry the rounds on both sides until golden and crispy. Set aside on paper towel.
- Coat the salmon with the fajita seasoning and pan fry in a little oil over medium-high heat until browned on all sides and cooked to your liking. Set aside to rest.
- Purée or mash the avocado with half of the lime juice and add salt to taste.
- Make the salsa by mixing the tomato, onion, coriander and chilli (if using) together with the remaining lime juice. Season with salt.
- Flake the salmon into large pieces, discarding the skin. Place the crispy tostadas onto a platter, spread with the avocado and top with the shredded cabbage. Place the salmon and salsa on top. Serve with coriander leaves and lime wedges.
Tip: These can be assembled and served, or alternatively served as a DIY platter, with everyone making their own.
Optional: You can swap out the salmon for some pan-fried lamb leg steaks.
