How to make Egg Salad Sandwich

Method

  1. Place eggs in a small saucepan and cover with cold water from the tap. Add eggs and place pan over medium heat and bring to a simmer. You can gently stir the eggs clockwise, to help centre the yolks while they cook.
  2. Simmer the eggs for 8 minutes (for just hard boiled). Run the eggs under cold water for 30-60 seconds, then place them in a bowl of iced water (see tip below) to cool quickly.
  3. To make the egg salad, peel cooled eggs. Roughly chop or mash them and add to a small bowl. Add mayonnaise, chives and sugar. Season with salt and pepper and mix with a fork. Taste and season as needed.
  4. Make 2 filled sandwiches and gently cut off the crusts using a super sharp bread knife. Cut each sandwich in half and serve.

Tip: Cooling the eggs in iced water helps to prevent the egg from forming a green ring around the yolks. Best not to boil the water too hard, a gentle simmer is all you need.

Optional: You can substitute chives with finely sliced spring onions. If you have an electric knife, it will give you very clean edges when cutting the sandwich.
