How to make a Fruit and Cream Sandwich
Method
- In a stainless steel bowl, with chilled beaters, whisk the cream and sugar on low speed, to combine. Add vanilla and beat on high speed until stiff peaks form. Refrigerate and set aside.
- Wash the berries, remove strawberry hulls. De-seed and slice mango. Slice the banana into 3 pieces.
- Place 4 slices of bread onto a board and top with half of the whipped cream. Add fruit and top with remaining cream. Fill in any gaps, so you create a smooth top. Make 1 each of mango, banana, blueberry and strawberry sandwiches.
- Add bread on top and gently cut off crusts using a super-sharp bread knife.
Cut each crustless sandwich in half and serve.
Tip: You can stack the sandwiches on top of each other and compress slightly between plates. Keep chilled in the fridge, covered in cling film and slice when ready to serve.
