How to Make Fully Loaded Iceberg Wedges
- Wash iceberg lettuce, and then slice the lettuce head into 4-6 wedges. Set aside.
- Prepare the filling. Combine the olive oil, diced onion, cucumber, carrot, black beans and coriander leaves in a large bowl. Combine the cumin, 1 teaspoon chilli flakes, crushed garlic, salt and pepper in a separate small bowl and then sprinkle this seasoning over the filling ingredients and toss gently to combine.
- Assemble the wedges on a platter and top with the filling. Drizzle with the dressing and garnish with chilli flakes and coriander.
- Season with salt and pepper and serve with lime wedges and corn chips.
Optional: Try adding some corn kernels and/or finely diced red capsicum to the filling.
