How to make Grilled Baby Cos and Corn Salad

Method

  1. For the dressing, add the olive oil, lime juice and zest, coriander, honey, garlic and salt together in a small blender or smoothie maker and blitz until smooth. Taste, adjust seasoning and set aside.
  2. For the salad, preheat a barbecue or chargrill to medium-high. Grill the corn for 10-12 minutes, turning occasionally until tender and evenly coloured. Set aside.
  3. Trim and discard the cos bases and cut each one lengthways into quarters. Grill on all sides for 5 minutes or until lightly charred.
  4. Place the cos onto a platter. Cut the corn kernels from the cob and place on top with the snow peas, tomatoes and avocado.
  5. Drizzle with the dresssing and scatter with pickled onion and coriander leaves.

Tip: If you like a sweeter dressing, you can add more honey.
