How to make Grilled Baby Cos and Corn Salad
Method
- For the dressing, add the olive oil, lime juice and zest, coriander, honey, garlic and salt together in a small blender or smoothie maker and blitz until smooth. Taste, adjust seasoning and set aside.
- For the salad, preheat a barbecue or chargrill to medium-high. Grill the corn for 10-12 minutes, turning occasionally until tender and evenly coloured. Set aside.
- Trim and discard the cos bases and cut each one lengthways into quarters. Grill on all sides for 5 minutes or until lightly charred.
- Place the cos onto a platter. Cut the corn kernels from the cob and place on top with the snow peas, tomatoes and avocado.
- Drizzle with the dresssing and scatter with pickled onion and coriander leaves.
Tip: If you like a sweeter dressing, you can add more honey.
