How to make Grilled Beef Lettuce Cups with Chilli Peanut Relish
Method
- Remove steak from fridge and make your relish first.
- Into a small mixing bowl, add in peanuts, minced garlic, brown sugar, vinegar, soy sauce and chopped chilli. Mix the ingredients together, stirring to combine. Set aside.
- Wash and separate lettuce leaves. Gently dry with a clean tea towel. Set aside onto serving platter.
- Preheat a heavy-based frypan to high (you can also use a BBQ grill). Brush both sides of steak with oil and season well. Cook for 3 minutes on each side or until medium rare*. Set aside to rest for 5 minutes.
- Thinly slice the steaks and place in the lettuce leaves. Add mint, coriander, red onion and chilli. Top with the peanut relish and serve.
Tip: You can use other beef steak cuts, such as T-bone, eye fillet, rump or porterhouse.
Optional: *Cook your steak a little longer, if you prefer it more cooked.
