How to make Grilled Beef Lettuce Cups with Chilli Peanut Relish

Method

  1. Remove steak from fridge and make your relish first. 
  2. Into a small mixing bowl, add in peanuts, minced garlic, brown sugar, vinegar, soy sauce and chopped chilli. Mix the ingredients together, stirring to combine. Set aside. 
  3. Wash and separate lettuce leaves. Gently dry with a clean tea towel. Set aside onto serving platter.
  4. Preheat a heavy-based frypan to high (you can also use a BBQ grill). Brush both sides of steak with oil and season well. Cook for 3 minutes on each side or until medium rare*. Set aside to rest for 5 minutes.
  5. Thinly slice the steaks and place in the lettuce leaves. Add mint, coriander, red onion and chilli. Top with the peanut relish and serve.

Tip: You can use other beef steak cuts, such as T-bone, eye fillet, rump or porterhouse.

Optional: *Cook your steak a little longer, if you prefer it more cooked.
