How to make Mixed Berry and Avocado Salad with Pecans

Method

  1. Make the dressing first. Stir together balsamic vinegar and honey in a medium-sized bowl. Slowly stream in olive oil while whisking continuously. Once combined, set aside.
  2. If toasting the pecans, place them in a shallow frying pan on medium heat. Toss pecans around in the pan until they’re lightly toasted – approximately 3 to 5 minutes. Use the same method for sesame seeds.
  3. Separate the lettuce leaves. Place a layer of the lettuce leaves in the base of a large serving bowl. Scatter the mixed berries, avocado, red onion and pecans over the top.
  4. Sprinkle with sesame seeds (optional) and drizzle with dressing.

Tip: You can use other types of lettuce or add baby spinach in this recipe. 

Optional: Add crumbled feta cheese over the top of salad, before you drizzle with dressing.
