How to make Moroccan Spiced Chickpea and Carrot Cous Cous

Method

  1. Make the dressing first: in a bowl add crushed garlic, ginger, cumin, chilli, cinnamon, honey, lemon juice, orange juice and lemon olive oil. Whisk all ingredients together and set aside.
  2. To prepare the cous cous, place chicken stock in a saucepan and add star anise. Gently simmer for 8 minutes to infuse. Then remove star anise.
  3. Place cous cous in a bowl and pour over the spiced chicken stock. Cover and stand for 2 minutes. Remove cover and fluff with a fork.
  4. Add grated carrot, chickpeas, mint, dates and almonds. Mix well.
  5. Taste and season with salt and pepper, to taste.
  6. Pour in dressing and mix well to coat. Serve
