How to make Roast Lamb Sliders with Lemon Pistachio Pesto

Method

  1. Cook lamb for 30 minutes, to packet directions and set aside. 
  2. Make the pesto by placing the mint, basil, pistachios, garlic, lemon zest and olive oil into a food processor with salt and pepper. Process into a coarse paste. Season to taste with lemon juice.
  3. Slice the buns in half and grill or toast the insides*. Carve the lamb into thin slices.
  4. Place the bun bases onto a platter and top with spinach leaves and sliced lamb. Finish with a generous spoonful of pesto. Place the bun lids on top and serve with lemon wedges.

Tip: You can use any type of leftover, boneless roast lamb. Try pounding the pesto in a mortar and pestle for a more textured option.

Optional: *You can also grill the bun tops on a grill pan, for a grill-mark effect.
