How to make Roast Lamb Sliders with Lemon Pistachio Pesto
Method
- Cook lamb for 30 minutes, to packet directions and set aside.
- Make the pesto by placing the mint, basil, pistachios, garlic, lemon zest and olive oil into a food processor with salt and pepper. Process into a coarse paste. Season to taste with lemon juice.
- Slice the buns in half and grill or toast the insides*. Carve the lamb into thin slices.
- Place the bun bases onto a platter and top with spinach leaves and sliced lamb. Finish with a generous spoonful of pesto. Place the bun lids on top and serve with lemon wedges.
Tip: You can use any type of leftover, boneless roast lamb. Try pounding the pesto in a mortar and pestle for a more textured option.
