Rockmelon and Prawn Salad Recipe

How to make Rockmelon and Prawn Salad
Method
- Spray a grill pan with olive oil and preheat on high.
- Once the grill is fully heated, add the prawns and cook for 2 minutes on each side.
- Whilst the prawns are grilling, make the dressing by placing the chunky dip into a small bowl and slowly drizzle with the olive oil to thin it out.
- Remove the prawns from the grill and place them in a bowl. Drizzle and toss with half of the dressing and set them aside.
- Slice the rockmelon, cucumber and avocado.
- Assemble the salad on a large platter by making a layer of rocket as a base. Continue adding layers of rockmelon slices, cucumber slices and avocado slices. And the prawns on top and finish the salad by sprinkling it with chilli flakes (if using) and drizzling with remaining dressing. Sprinkle with salt and pepper, to taste.
Tip: Rockmelon sweetness is enhanced when you add salt to it, so sprinkle the rockmelon with salt before plating.
