How to make Salmon Stuffed Avocado
Method
- In a bowl combine cream cheese, celery, onion, shallots, capsicum, garlic, lime juice, mustard, salt and pepper. Mix well.
- Toast sesame seeds in a frypan and set aside.
- Drain salmon, remove skin and bones, add into mixture.
- Halve avocados lengthwise and remove seed.
- Scoop about 1-2 tablespoons of flesh from each avocado into a small bowl, mash with a fork and stir into salmon mixture.
- Fill each avocado half with about a ¼ cup of the salmon mixture, mounding it on top of the avocado halves.
- Scatter toasted seasme seeds over the top to serve.
