How to Make Scrambled Tomatoes
Method
- Heat pan and lightly fry tomato in olive oil for about three minutes.
- Add feta and spinach to the pan, and cook for one minute. Add pesto, and toss to combine. Season to taste.
- Lightly toast rye bread, then smear each slice with half an avocado. Place scrambled tomatoes on top to finish.
