How to make Sesame Ginger Beef Salad

Method

  1. Mix the honey with the soy sauce and ginger and place into a large mixing bowl with the beef. Stir well to coat and leave to marinate for 15 minutes.
  2. Cut the carrots into matchsticks and place in a bowl. Add the sugar, vinegar, salt and 60ml water and mix to combine. Leave to pickle for 15 minutes. 
  3. Make the dressing by whisking the soy sauce, vinegar, grated ginger, oil and sesame seeds together and set aside.
  4. Place oil into a large wok or frying pan over a high heat and pan-fry the meat in batches until browned and just cooked through. Set aside to rest for 5 minutes.
  5. Place the cooked beef in a mixing bowl. Drain the pickled carrot and add it to the beef with the kale, cucumber, noodles and half of the sesame seeds and toss well. Place on a platter, add dressing to taste and sprinkle with remaining sesame seeds. 

Optional: The dressing and pickled carrot can be prepared a day ahead and stored in the fridge.
