How to make Sesame Ginger Beef Salad
Method
- Mix the honey with the soy sauce and ginger and place into a large mixing bowl with the beef. Stir well to coat and leave to marinate for 15 minutes.
- Cut the carrots into matchsticks and place in a bowl. Add the sugar, vinegar, salt and 60ml water and mix to combine. Leave to pickle for 15 minutes.
- Make the dressing by whisking the soy sauce, vinegar, grated ginger, oil and sesame seeds together and set aside.
- Place oil into a large wok or frying pan over a high heat and pan-fry the meat in batches until browned and just cooked through. Set aside to rest for 5 minutes.
- Place the cooked beef in a mixing bowl. Drain the pickled carrot and add it to the beef with the kale, cucumber, noodles and half of the sesame seeds and toss well. Place on a platter, add dressing to taste and sprinkle with remaining sesame seeds.
Optional: The dressing and pickled carrot can be prepared a day ahead and stored in the fridge.
