How to make The Greek Lamb Sandwich

Method

  1. Pan fry the lamb to your liking. Set aside to cool. When ready to handle, cut the lamb into cubes or thin slices.
  2. Lay the lamb, capsicum, tomato, cucumber, onion, olives, mint and parsley onto a large chopping board. Using a large sharp knife, chop until fine and evenly mixed.
  3. Add the fetta, yogurt, oil, lemon juice and oregano on top and mix it through. If you prefer, you can add the meat mixture to a bowl and the fetta, yogurt and oil, then mix together. Season to taste.
  4. Cut the Turkish rolls in half lengthways and fill generously with the filling.

Tip: Make the filling just before serving to avoid it getting soggy.

Optional: You can use any leftover cooked lamb.
