How to make The Greek Lamb Sandwich
Method
- Pan fry the lamb to your liking. Set aside to cool. When ready to handle, cut the lamb into cubes or thin slices.
- Lay the lamb, capsicum, tomato, cucumber, onion, olives, mint and parsley onto a large chopping board. Using a large sharp knife, chop until fine and evenly mixed.
- Add the fetta, yogurt, oil, lemon juice and oregano on top and mix it through. If you prefer, you can add the meat mixture to a bowl and the fetta, yogurt and oil, then mix together. Season to taste.
- Cut the Turkish rolls in half lengthways and fill generously with the filling.
Tip: Make the filling just before serving to avoid it getting soggy.
Optional: You can use any leftover cooked lamb.
