How to make The Lox Bagel

Method

  1. Make the filling just before serving, to avoid it getting soggy.
  2. Slice the smoked salmon into large pieces.
  3. Place the salmon, onion, cucumbers, spinach, chives, dill, capers and lemon zest onto a large chopping board. Use a sharp knife to chop well until evenly mixed.
  4. Add the cream cheese and mix until evenly combined (if you prefer, you can move this step to a mixing bowl, if not wanting to mix on the board). Once combined, add lemon juice and black pepper to taste.
  5. Cut the bagels in half, lengthways and fill generously with the filling. Then halve each one, and serve.

Optional: You can use regular bread rolls or slices of sourdough in place of the bagels.
