How to make The Lox Bagel
Method
- Make the filling just before serving, to avoid it getting soggy.
- Slice the smoked salmon into large pieces.
- Place the salmon, onion, cucumbers, spinach, chives, dill, capers and lemon zest onto a large chopping board. Use a sharp knife to chop well until evenly mixed.
- Add the cream cheese and mix until evenly combined (if you prefer, you can move this step to a mixing bowl, if not wanting to mix on the board). Once combined, add lemon juice and black pepper to taste.
- Cut the bagels in half, lengthways and fill generously with the filling. Then halve each one, and serve.

Optional: You can use regular bread rolls or slices of sourdough in place of the bagels.
