How to make Sweet Apple Tart

Method

  1. In a small saucepan, place 2 tablespoons of water and add the caster sugar. Cook over medium-low heat until golden brown. Turn off the heat briefly and stir in butter, lemon juice, vanilla, salt, ginger, cinnamon and diced apple.
  2. Turn the heat back on to medium and stir as needed. Continue to cook until the apple has released juice, softened and the sugar has melted.
  3. Add flour to the apple mixture, stir and cook for a couple of minutes until the sauce thickens.
    Transfer the apple filling to another bowl and let it cool.
  4. Preheat the oven to 200°C (180°C fan-forced) . Line a baking tray with baking paper. Take 4 pieces of roti from the freezer, remove the wrapper and lay 2 pieces on the baking sheet. Spread half of the apple mixture on each piece.
  5. Lay the other 2 pieces of roti on top. Press slightly to seal. If the pastry is still very frozen, wait a few more minutes to soften.
  6. Make 8 cuts as if slicing a cake, but leave the middle about 5cm uncut.
  7. Twist each slice upside down.
  8. Brush the tart with some water and sprinkle raw sugar on top.
  9. Bake for 20 minutes or until brown and golden.

Optional: Dust with icing mixture just before serving.
