Watermelon, Mint and Fetta Salad Recipe

How to Make Watermelon, Mint and Fetta Salad
Method
- Cut the skin off the watermelon and cut into large fingers. Place onto a serving platter.
- Drain the flavoured oil from the fetta and reserve 3 teapoons for the dressing. Discard the peppercorns.
- Dot the feta on top of the watermelon and drizzle with the vinegar and reserved oil.
- Scatter over the mint leaves and top with some freshly ground black pepper.
Tip: Assemble just before serving, for maximum freshness.
Optional: You can substitute marinated fetta for Greek- or Persian-style fetta.
