How to make BBQ Pork with Pineapple and Dragon Fruit Salsa
Method
- For the salsa, dice the pineapple and dragon fruit flesh. Place into a bowl with the mint, onion, chilli, lime juice and fish sauce. Mix this together, garnish with baby mint leaves and set aside.
- Heat a grill plate, BBQ or chargrill to a high heat. Cut the pork into large cubes, thread onto skewers and lightly spray with oil. Grill for a few minutes on each side, turning to cook evenly on all sides. Continue until cooked through, ensuring all sides are nicely coloured. Cover with foil and set aside to rest.
- Meanwhile, cook the roti paratha in a separate frypan and add to a plate, lightly covered with foil, to keep warm.
- Serve the pork with the salsa, lettuce leaves, roti and lime.
Optional: The pineapple can be swapped out with mango.
