How to make BBQ Pork with Pineapple and Dragon Fruit Salsa

Method

  1. For the salsa, dice the pineapple and dragon fruit flesh. Place into a bowl with the mint, onion, chilli, lime juice and fish sauce. Mix this together, garnish with baby mint leaves and set aside.
  2. Heat a grill plate, BBQ or chargrill to a high heat. Cut the pork into large cubes, thread onto skewers and lightly spray with oil. Grill for a few minutes on each side, turning to cook evenly on all sides. Continue until cooked through, ensuring all sides are nicely coloured. Cover with foil and set aside to rest.
  3. Meanwhile, cook the roti paratha in a separate frypan and add to a plate, lightly covered with foil, to keep warm.
  4. Serve the pork with the salsa, lettuce leaves, roti and lime.

Optional:  The pineapple can be swapped out with mango.
