How to Make Beef Blade Steak with Prik Nam Pla
Method
- Combine garlic, chillies, sugar, fish sauce, lime juice and lime zest into a small saucepan. Heat and stir until sugar has dissolved. Set aside your prik nam pla sauce and allow to cool.
- Heat a lightly oiled, large frypan over medium-high heat. Season blade steak with salt and pepper. Cook steak for 3 minutes on each side and rest for 2 minutes for medium doneness. See tip below, for various suggested cooking times.
- Serve blade steak alongside prik nam pla sauce.
Tips: Cooking the steak – bring steak to room temperature. Preheat pan or BBQ to hot. Drizzle steak with oil and season with salt and pepper. As a rule of thumb, cook 3 minutes each side for medium 5-6 minutes on each side for well-done. For more steak cooking details, visit Australian Beef.
If made with fresh ingredients, prik nam pla sauce can be stored in the fridge, in a lidded glass jar, for up to 2 weeks.
