How to Make Beef Roast marinated with Zhoug
Method
- Preheat oven to 200°C (180°C fan-forced). Line a suitably-sized baking tray.
- Check the product pack weight, so you can determine the cooking time. Remove product from packaging and place roast on a rack in the roasting tray. Cook for 60 minutes per kg.
- Remove from oven and cover loosely with aluminium foil. Allow the roast to rest for 20 minutes before carving.
- Whilst roast is resting, prepare your zhoug sauce. Pick parsley and coriander leaves from their stems. Place herbs chillies, garlic, cumin and olive oil into a small blender. Blend until smooth. Add lemon juice, salt and pepper to taste. Makes approximately 250ml of sauce.
Tip: Prepare this just before serving to preserve the fresh, green colour of the sauce.
Optional: For a hotter-tasting sauce, add the chilli seeds.
