How to Make Beef Roast marinated with Zhoug

Method

  1. Preheat oven to 200°C (180°C fan-forced). Line a suitably-sized baking tray.
  2. Check the product pack weight, so you can determine the cooking time. Remove product from packaging and place roast on a rack in the roasting tray. Cook for 60 minutes per kg.
  3. Remove from oven and cover loosely with aluminium foil. Allow the roast to rest for 20 minutes before carving.
  4. Whilst roast is resting, prepare your zhoug sauce. Pick parsley and coriander leaves from their stems. Place herbs chillies, garlic, cumin and olive oil into a small blender. Blend until smooth.  Add lemon juice, salt and pepper to taste. Makes approximately 250ml of sauce.

Tip: Prepare this just before serving to preserve the fresh, green colour of the sauce.

Optional: For a hotter-tasting sauce, add the chilli seeds.
