How to make Hot Smoked Salmon, Pea and Zucchini Pasta

Method

  1. Place oil into a large, heavy-based frying pan over a medium-high heat. Add the zucchini and sauté for 2 minutes or until tender. Season with salt and pepper and transfer to a plate.
  2. Place the pan over a high heat and add the stock, 150ml cream and 300ml water. When bubbling, add the pasta and reduce the heat to medium-high. Cook for 12 minutes or until pasta is al dente, stirring often. Turn the heat down slightly and add a splash more water if it starts to look dry.
  3. Using a fork, tear hot smoked salmon into chunks. Add to frypan. Fold in the peas and sautéed zucchini and cook gently for 1 minute. Add the remaining cream, remove from the heat and stir in half of the herbs.
  4. Add lemon juice to taste and season with salt and pepper. Sprinkle remaining herbs on top and serve.

Tip: For a ‘brighter’ flavour, you can grate lemon zest over the top, before adding herbs to garnish.

Optional: You can substitute the sautéed zucchini with cooked broccoli or broccolini.
