How to make Hot Smoked Salmon, Pea and Zucchini Pasta
Method
- Place oil into a large, heavy-based frying pan over a medium-high heat. Add the zucchini and sauté for 2 minutes or until tender. Season with salt and pepper and transfer to a plate.
- Place the pan over a high heat and add the stock, 150ml cream and 300ml water. When bubbling, add the pasta and reduce the heat to medium-high. Cook for 12 minutes or until pasta is al dente, stirring often. Turn the heat down slightly and add a splash more water if it starts to look dry.
- Using a fork, tear hot smoked salmon into chunks. Add to frypan. Fold in the peas and sautéed zucchini and cook gently for 1 minute. Add the remaining cream, remove from the heat and stir in half of the herbs.
- Add lemon juice to taste and season with salt and pepper. Sprinkle remaining herbs on top and serve.
Tip: For a ‘brighter’ flavour, you can grate lemon zest over the top, before adding herbs to garnish.
Optional: You can substitute the sautéed zucchini with cooked broccoli or broccolini.
