How to make Lemon Chicken, Potato and Olive Tray Bake

Method

  1. Place the chicken into a large bowl with the garlic, mustard, lemon zest, thyme and 2 tablespoons of olive oil. Cover and refrigerate for at least an hour or up to overnight.
  2. Preheat oven to 180°C (160°C fan-forced). Cut the potatoes into 4-6 wedges, depending on their size, then place onto a large baking sheet. Toss with remaining oil and bake for 20 minutes.
  3. Place broccoli and lemon slices into the bowl with the marinating chicken and stir to coat well. Place chicken, broccoli and lemon in a single layer around the potatoes and bake for 25 minutes, turning the broccoli a couple of times during cooking. 
  4. Rub or spray the sage leaves with a little oil to prevent burning. Then dot them around the tray with the olives. Season everything well and cook for a final 5 minutes.
  5. Sprinkle with lemon juice to taste, then serve.

Tip: Spread out ingredients in the tray in a single layer, so they brown rather than steam.

Optional: You can swap out sage for oregano, thyme or a combination.
