How to make Lemon Chicken, Potato and Olive Tray Bake
Method
- Place the chicken into a large bowl with the garlic, mustard, lemon zest, thyme and 2 tablespoons of olive oil. Cover and refrigerate for at least an hour or up to overnight.
- Preheat oven to 180°C (160°C fan-forced). Cut the potatoes into 4-6 wedges, depending on their size, then place onto a large baking sheet. Toss with remaining oil and bake for 20 minutes.
- Place broccoli and lemon slices into the bowl with the marinating chicken and stir to coat well. Place chicken, broccoli and lemon in a single layer around the potatoes and bake for 25 minutes, turning the broccoli a couple of times during cooking.
- Rub or spray the sage leaves with a little oil to prevent burning. Then dot them around the tray with the olives. Season everything well and cook for a final 5 minutes.
- Sprinkle with lemon juice to taste, then serve.
Tip: Spread out ingredients in the tray in a single layer, so they brown rather than steam.
Optional: You can swap out sage for oregano, thyme or a combination.
