How to make Mild Spiced Fried Fish with Roast Sesame Potatoes
Method
- Preheat oven to 220°C (200°C fan-forced).
- Line a baking tray with baking paper. Toss the potato cubes with 2 tablespoons of oil and place on prepared tray. Bake for 30-35 minutes or until crisp and golden.
- Meanwhile, heat a non-stick frypan on medium heat and toast sesame seeds for 2 -3 minutes or until lightly golden. Continuously move around the pan, so as not to stick and burn. Set aside.
- Steam broccoli and peas. Toss in olive oil and season. Keep warm.
- Combine flour, paprika and cumin on a plate. Season lightly with salt and papper. Coat both sides of fish in the mixture.
- Heat remaining oil in a medium-sized, non-stick frying pan over medium heat.
- Remove cooked potatoes. Drizzle with a little more olive oil, season with salt and pepper and the toasted sesame seeds. Toss and set aside.
- Add fish to the warm pan and cook for 2-3 minutes on each side or until the fish is cooked and opaque. Keep warm.
- Serve fish with sesame potatoes and steamed vegetables.
Tip: Try serving with mayonnaise as a dipping sauce.
