How to make Minestrone Soup with Pasta
Method
- Heat oil in a large soup pot over medium-high heat. Add the onion and garlic and cook for 3 minutes or until the onion becomes translucent.
- Add carrot, celery and zucchini and cook, stirring regularly, for 5 minutes or until the vegetables are soft.
- Stir in chicken stock, diced tomatoes, tomato paste and herbs and bring to a boil.
- Add pasta, beans and kale and simmer for 20 minutes uncovered or until pasta is al dente.
- Remove the pot from the heat and remove the bay leaf. Stir in the lemon juice and season to taste.
- Top with parmesan cheese. Garnish with fresh parsley leaves
- Serve with crunchy sourdough bread.
