How to make Salmon with Spiced Mango, Ginger and Coriander
Method
- Add mango to a blender with lemon juice. mustard, olive oil, tomato paste, maple syrup and chilli. Pulse until smooth. (If using frozen mango, fully defrost first.)
- Heat frypan on medium heat and cook for 5-6 minutes. Remove from heat and cool. Taste and season with salt and pepper as required.
- Spread marinade sauce mixture over salmon pieces.
- Heat frypan and cook salmon fillets – skin side down – for 4 minutes, until skin is crisp and salmon is cooked halfway up fillet.
- Turn fillets over and cook for a further 3-4 minutes. Remove from heat and rest 2 for minutes.
- Drizzle with more of the marinade and garnish with chopped, fresh coriander.
Tip: This marinade works particularly well with fish and prawns. It can be used as a marinade or as a flavouring for a mayonnaise-based dipping sauce. If using it this way, simply place the ingredients into a small food processor and blitz until smooth.
