How to make Spiced Lamb Kebabs with Grilled Cauliflower
Method
- Make the spice mix: Grind cloves with a mortar and pestle. Add ground cloves along with all the other spices in an airtight container. Stir through and set aside.
- Trim lamb and cut into 3cm cubes. Toss lamb through spices then place 6-7 pieces on a skewer. Continue with the rest of the lamb. Place in refrigerator for 10-15 minutes.
- Make the lemon dressing: In a bowl, add zest and juice of lemon, mustard, garlic and sugar. Whisk in olive oil until emulsified.
- Cut out the stem and leaves of the cauliflower. Break off the florets then cut the florets into thick slices. Heat a grill plate to a medium-high heat, add 2 teaspoons of vegetable oil then char the flat side down for 3-4 minutes. Turnover and further char for 3-4 minutes. Let cool for 15-20 minutes.
- Slice the mango cheeks, peel and cut into cubes then grill them on a high heat for 2-3 minutes, for colour and a charred flavour.
- Peel red onion and cut into wedges. Grill on medium-high heat for 4-5 minutes.
- Roughly chop coriander leaves.
- In a large bowl, add onion, coriander, cauliflower and mango. Add lemon dressing and toss through.
- Bring a grill plate or skillet to a medium-high heat, lightly oil then cook each skewer on all sides for at least 3-4 minutes.
- Serve with – or on top of – a salad. Garnish with coriander leaves.
