How to make Vegetarian Mushroom and Bean Gnocchi

Method

  1. Heat a large frying pan over medium heat. Add the butter or oil and onion and carrot. Cook for 5 minutes or until softened. Add garlic, if using, and mushrooms, then cook for 3-4 minutes or until the mushrooms are soft.
  2. Add the flour and cook, stirring, for 1 minute. Remove from heat and gradually add the cream, while stirring, until smooth. Return pan to a medium heat and cook, while stirring, for 1-2 minutes or until the sauce bubbles and thickens.
  3. Stir through the cannellini beans and heat through. Stir through half the cheese.
  4. Meanwhile, bring a medium-sized saucepan of water to the boil. Add the gnocchi and cook for 1 minute or until the water returns to the boil. Drain the gnocchi and stir into the mushroom sauce.
  5. Serve sprinkled with the remaining cheese.
  6. Accompany with kaleslaw salad and sliced, warm Turkish bread rolls.
